Method
- Preheat oven to 375°F (190°C). Lightly grease an 8×8 baking dish.
- Sauté onions & garlic in a little oil until soft (3–5 minutes).
- In a large bowl, combine sliced zucchini, sautéed onions/garlic, Snow Cheddar, half of the Parmesan, breadcrumbs, salt, pepper, and thyme.
- Whisk together eggs and milk. Pour over the zucchini mixture and stir to coat.
- Pour everything into the baking dish. Top with remaining Parmesan and extra breadcrumbs if desired.
- Bake uncovered for 30–35 minutes, or until golden and set.
- Let cool slightly before serving. Garnish with fresh herbs (like parsley or basil) if desired.
