Cheesy Zucchini Bake with Snow Cheddar

A golden, cheesy zucchini bake loaded with fresh garden flavors and the rich, creamy bite of Ron’s Snow Cheddar. It’s the ultimate late-summer comfort dish — crispy on top, melty in the middle.

Ingredients
  

  • 2 medium zucchinis thinly sliced
  • 1 small yellow onion finely chopped
  • 2 cloves garlic minced
  • 1 cup Ron’s Snow Cheddar shredded (or Cheese Whips chopped finely)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs panko preferred
  • 2 large eggs
  • 1/2 cup milk or half-and-half
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or Italian seasoning
  • 1 tbsp olive oil or butter for greasing dish

  • Mixing bowl
  • Frying pan (for onions/garlic)

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8 baking dish.
  2. Sauté onions & garlic in a little oil until soft (3–5 minutes).
  3. In a large bowl, combine sliced zucchini, sautéed onions/garlic, Snow Cheddar, half of the Parmesan, breadcrumbs, salt, pepper, and thyme.
  4. Whisk together eggs and milk. Pour over the zucchini mixture and stir to coat.
  5. Pour everything into the baking dish. Top with remaining Parmesan and extra breadcrumbs if desired.
  6. Bake uncovered for 30–35 minutes, or until golden and set.
  7. Let cool slightly before serving. Garnish with fresh herbs (like parsley or basil) if desired.
