John Pagel, the creator of Snow Cheddar, was determined to create a signature cheese to be made at his new farmstead cheese operation in Kewaunee, WI.

After tasting several types of cheese and consulting with industry experts, he identified the flavors and unique qualities he wanted in a cheese and worked to create a recipe to achieve these desired results. The cheese’s name, Snow, was chosen to showcase its natural, uncolored appearance that is true to snow and naturally made cheeses. Because of this Snow Cheddar was made and is a true testament to John’s dedication to producing authentic, high-quality cheese on his farmstead operation.
